These fudgy zucchini yogurt brownies are a delicious and healthier way to enjoy a classic dessert. The zucchini adds moisture and nutrients, while the yogurt keeps them light and tender.

  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup plain Greek yogurt
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups shredded zucchini, squeezed dry
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In a separate bowl, combine sugar, yogurt, oil, eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Stir in the shredded zucchini and chocolate chips (if using).
  6. Pour batter into the prepared baking pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  8. Let cool completely before cutting into squares.

For an extra decadent treat, top the brownies with a chocolate ganache or a dusting of powdered sugar.
