  • 6 boneless, skinless chicken thighs
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained
  • 5 ounces fresh spinach
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season chicken thighs with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs and cook for 5-7 minutes per side, or until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. Add minced garlic and sun-dried tomatoes to the skillet and cook for 1-2 minutes, until fragrant.
  4. Add chicken broth to the skillet and bring to a simmer, scraping up any browned bits from the bottom.
  5. Stir in heavy cream and Parmesan cheese. Reduce heat to low and simmer for 2-3 minutes, until the sauce has thickened slightly.
  6. Add spinach to the skillet and cook until wilted, about 1-2 minutes.
  7. Return chicken thighs to the skillet and coat with the sauce. Heat through.
  8. Serve immediately.

Notes

Serve over pasta, rice, or mashed potatoes for a complete and satisfying meal. You can also add a pinch of red pepper flakes for a little heat.
