Triple Almond Cookies

Delight in these crunchy and fragrant Triple Almond Cookies that blend almond flour, almond extract, and sliced almonds for a rich, nutty flavor perfect for any occasion.

  • 1 cup almond flour
  • 1/2 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon almond extract
  • 1/3 cup sliced almonds
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together almond flour, all-purpose flour, baking powder, and salt.
  3. In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg and almond extract into the butter mixture until well combined.
  5. Gradually add the dry ingredients into the wet mixture and mix until a dough forms.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Press a few sliced almonds onto the top of each cookie ball and gently flatten slightly.
  8. Bake for 12-15 minutes or until the edges are lightly golden.
  9. Remove from oven and allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Optional: Dust with powdered sugar before serving for an elegant finish.

For extra almond flavor, try drizzling melted white chocolate over cooled cookies or adding a pinch of cinnamon to the dough.
