  • 68 Large Eggs
  • 1/2 cup Milk
  • 1/2 cup Heavy Cream (optional)
  • 1 cup Shredded Cheese (Cheddar, Monterey Jack, Gruyere, or a blend)
  • 46 Large Flour Tortillas (burrito size)
  • 1 cup Cooked Fillings of Choice: Crumbled Bacon, Sausage, Diced Ham, Sautéed Spinach, Diced Onions and Bell Peppers, Sliced Mushrooms
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • Optional Pinch Nutmeg or Paprika
  • Optional Butter or Cooking Spray for greasing

Instructions

  1. Preheat & Prep: Preheat oven to 375°F (190°C) and lightly grease a 9-inch pie or casserole dish.
  2. Line the Dish: Arrange tortillas overlapping in the dish, forming a crust.
  3. Cook Fillings (If Necessary): Pre-cook raw ingredients and drain any excess moisture.
  4. Whisk the Custard: In a bowl, whisk together eggs, milk, cream, salt, pepper, and optional spices until smooth and frothy.
  5. Combine & Fill: Stir shredded cheese and cooked fillings into the egg mixture.
  6. Pour into Crust: Pour the filling into the tortilla-lined dish, spreading evenly.
  7. Bake: Bake for 30-45 minutes until the center is set and the top is golden.
  8. Rest: Let the quiche rest for 5-10 minutes before slicing and serving.

Notes
