Easy Tomato Soup Recipe

This classic tomato soup recipe is a comforting and flavorful dish perfect for a cozy meal. Made with fresh tomatoes, herbs, and a touch of cream, it’s a simple yet satisfying soup that’s ready in under an hour.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 (28 ounce) cans crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon sugar
  • Salt and pepper to taste
  • 1/4 cup heavy cream (optional)
  • Fresh basil leaves, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in crushed tomatoes, vegetable broth, basil, oregano, red pepper flakes (if using), and sugar. Season with salt and pepper to taste.
  3. Bring to a simmer and cook for 20 minutes, stirring occasionally.
  4. Remove from heat and let cool slightly.
  5. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a regular blender in batches and blend until smooth.
  6. Return the soup to the pot and stir in heavy cream (if using). Heat through gently.
  7. Serve hot, garnished with fresh basil leaves.

Notes

For a richer flavor, roast the tomatoes before blending. Simply toss halved tomatoes with olive oil, salt, and pepper, then roast at 400°F (200°C) for 30-40 minutes before adding them to the soup.
