  • 1 cup sweetened condensed milk (about 300g)
  • 2 cups unsweetened shredded coconut (plus extra for rolling)
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/2 cup finely chopped nuts (almonds, pecans, or walnuts)

Instructions

  1. Line a baking sheet with parchment paper and set aside.
  2. In a large bowl, mix sweetened condensed milk, shredded coconut, vanilla extract, and salt until combined. If using nuts, fold them in gently.
  3. Cover the bowl and refrigerate for 30 minutes to firm up the mixture.
  4. Scoop tablespoon-sized portions and roll into smooth balls. Coat each ball in extra shredded coconut.
  5. For a firmer texture, bake in a preheated oven at 350°F (175°C) for 8-10 minutes, or keep them no-bake for a softer texture.
  6. Let them cool completely before serving.

Notes

For best results, use fresh shredded coconut. Chill the dough thoroughly before rolling. Wet your hands slightly if the mixture sticks.
