Ingredients

  • 1 pound ground beef
  • 1 large sweet potato, peeled and diced
  • 2 medium zucchini, diced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion and cook until softened, about 3-5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. Add sweet potato and cook for 5-7 minutes, stirring occasionally, until slightly softened.
  4. Add zucchini, diced tomatoes (with juice), oregano, basil, and red pepper flakes (if using). Season with salt and pepper to taste.
  5. Bring to a simmer, then reduce heat and cover. Cook for 10-15 minutes, or until sweet potato is tender and zucchini is cooked through.
  6. Serve hot.
