Instructions

  1. Mash the sweet potato until smooth.
  2. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together the egg, milk, and melted butter.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix. Gently fold in mashed sweet potato.
