  • 4 cups fresh rhubarb, cut into 1/2-inch pieces
  • 4 cups fresh strawberries, hulled and halved
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 tsp ground cinnamon
  • 2 tbsp butter, cut into small pieces
  • 1 large egg, beaten
  • Turbinado sugar, for sprinkling

Instructions

  1. Prepare the crust: In a large bowl, whisk together flour and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough just comes together.
  2. Chill the dough: Divide the dough in half, flatten each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
  3. Make the filling: In a large bowl, combine rhubarb, strawberries, granulated sugar, flour, and cinnamon. Mix gently.
  4. Assemble the pie: On a lightly floured surface, roll out one disk of dough into a 12-inch circle. Transfer to a 9-inch pie plate. Trim and crimp the edges.
  5. Fill and bake: Pour the strawberry rhubarb filling into the pie crust. Dot with butter pieces. Roll out the remaining dough and cut into strips for a lattice top, or use as a full top crust with slits for venting. Brush with beaten egg and sprinkle with turbinado sugar.
  6. Bake: Bake in a preheated 400°F (200°C) oven for 50-60 minutes, or until the crust is golden brown and the filling is bubbly. Let cool completely before slicing and serving.

Notes

For a richer flavor, use brown butter in the crust. If the crust starts to brown too quickly, cover the edges with foil.
