These Strawberry Lemonade Cookies combine tangy lemon zest with sweet strawberry flavor for a refreshing and delightful treat perfect for any season.

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup powdered sugar
  • 1 large egg
  • 2 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup freeze-dried strawberries, crushed
  • 1 tbsp cornstarch
  • Optional: pink sanding sugar for topping

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  3. Beat in the egg, lemon zest, and lemon juice until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, cornstarch, and crushed freeze-dried strawberries.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Roll dough into 1.5-inch balls and place them on the prepared baking sheet about 2 inches apart.
  7. Optional: Sprinkle pink sanding sugar on top of each cookie for added sparkle.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For an extra burst of flavor, drizzle a simple lemon glaze over cooled cookies by mixing powdered sugar with a little fresh lemon juice.
