Spicy Miso Ginger Chicken Bowl

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup miso paste
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon grated ginger
  • 1 clove garlic, minced
  • 1 teaspoon sriracha (or more, to taste)
  • 1 tablespoon sesame oil
  • Cooked rice, for serving
  • Optional toppings: sliced green onions, sesame seeds, avocado, shredded carrots, kimchi

Instructions

  1. In a bowl, whisk together miso paste, soy sauce, rice vinegar, ginger, garlic, sriracha, and sesame oil.
  2. Add the chicken to the bowl and toss to coat. Marinate for at least 15 minutes, or up to 2 hours in the refrigerator.
  3. Heat a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 6-8 minutes.
  4. Serve the chicken over rice with your favorite toppings.

Notes

For a vegetarian option, substitute tofu for chicken. You can also add other vegetables to the bowl, such as steamed broccoli or edamame.
