Spicy Honey-Ginger Chicken Bowls with Yum Yum Sauce

A bold and flavorful chicken bowl with sweet-spicy honey ginger glaze, served over rice with crisp vegetables and a creamy yum yum sauce.

  • 500g boneless chicken thighs, cut into chunks
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon sriracha
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • 1 cup cooked jasmine rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 1/2 cup edamame, cooked
  • 1 tablespoon sesame seeds
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix soy sauce, honey, ginger, garlic, sriracha, and sesame oil to make the marinade.
  2. Add chicken chunks and toss to coat. Let marinate for at least 20 minutes.
  3. Heat a skillet over medium-high heat and cook chicken until browned and cooked through.
  4. Sprinkle cornstarch and stir to thicken the sauce slightly.
  5. Assemble bowls with rice, cooked chicken, carrots, cucumber, and edamame.
  6. Drizzle with yum yum sauce and sprinkle sesame seeds and cilantro on top.

Notes

For extra flavor, marinate the chicken overnight. Adjust sriracha to your spice preference.
