Spicy Honey-Ginger Chicken Bowls with Yum Yum Sauce

A sweet, spicy, and savory chicken bowl drizzled with creamy Yum Yum Sauce, served over rice for the perfect quick and flavorful meal.

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/4 cup soy sauce
  • 3 tbsp honey
  • 2 tbsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tbsp rice vinegar
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 tsp sesame oil
  • 2 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 4 cups cooked rice (white, brown, or jasmine)
  • 1 tbsp sesame seeds, for garnish
  • 2 green onions, thinly sliced, for garnish

Yum Yum Sauce:

  • 1/2 cup mayonnaise
  • 1 tbsp rice vinegar
  • 1 tbsp ketchup
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1/2 tsp sugar
  • 12 tbsp water (to adjust consistency)

Instructions

  1. In a medium bowl, combine soy sauce, honey, ginger, garlic, rice vinegar, red pepper flakes, and sesame oil. Add chicken pieces and toss to coat. Marinate in the refrigerator for at least 30 minutes.
  2. In a small bowl, whisk together mayonnaise, rice vinegar, ketchup, garlic powder, paprika, sugar, and water to make the Yum Yum Sauce. Refrigerate until ready to use.
  3. Heat vegetable oil in a large skillet over medium-high heat. Remove chicken from marinade (reserve marinade) and cook for 5-7 minutes, until browned and cooked through.
  4. Pour the reserved marinade into the skillet and bring to a simmer. Cook for 2-3 minutes until slightly thickened. If needed, mix cornstarch with 2 tbsp cold water to make a slurry and stir into the sauce to thicken.
  5. Divide cooked rice among four bowls. Top with spicy honey-ginger chicken, drizzle with Yum Yum Sauce, and garnish with sesame seeds and green onions. Serve immediately.
