Southern-Style Honey Butter Cornbread Poppers

These cornbread poppers are a fun and delicious twist on classic Southern cornbread. They’re perfect as a side dish, appetizer, or snack!

Ingredients

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 egg, lightly beaten

Instructions

  1. Preheat oven to 400°F (200°C). Grease a mini muffin tin.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine buttermilk, oil, and egg.
  4. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  5. Fill each mini muffin cup about 2/3 full.
  6. Bake for 12-15 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  7. Let cool slightly before serving.

Notes

For extra flavor, add 1/2 cup of shredded cheddar cheese or diced jalapenos to the batter.
