  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 large eggs
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Optional: powdered sugar or cinnamon sugar for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a large bowl, whisk together the sourdough discard and apple cider until combined.
  3. Add the eggs, melted butter, and vanilla extract to the wet mixture; mix well.
  4. In a separate bowl, sift together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, cloves, granulated sugar, and brown sugar.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  6. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove from oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Optional: Once cooled, dust the top with powdered sugar or cinnamon sugar before slicing and serving.

Notes

For extra flavor, serve slices toasted with a smear of butter or cream cheese. You can also add chopped nuts or dried cranberries to the batter for texture.
