  • 1 pound smoked sausage, sliced
  • 1.5 pounds Yukon gold potatoes, diced
  • 1 medium onion, chopped
  • 1 bell pepper (any color), chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add the sliced smoked sausage and cook until browned on both sides, about 3-5 minutes. Remove sausage from skillet and set aside.
  3. Add the diced potatoes, chopped onion, and bell pepper to the skillet. Cook until the potatoes are tender and slightly browned, about 10-12 minutes, stirring occasionally.
  4. Add the minced garlic, smoked paprika, dried thyme, and red pepper flakes (if using) to the skillet. Cook for 1 minute more, stirring constantly.
  5. Return the cooked smoked sausage to the skillet. Season with salt and pepper to taste.
  6. Stir everything together and cook for another 2-3 minutes, allowing the flavors to meld.
  7. Garnish with fresh parsley before serving.
