  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp honey
  • 1/2 tsp ground ginger
  • 1/4 tsp garlic powder
  • 1/4 cup vegetable oil
  • 1/2 head green cabbage, shredded
  • 1/2 head purple cabbage, shredded
  • 1 cup shredded carrots
  • 1/2 cup chopped green onions
  • 1/4 cup sesame seeds
  • 1/4 cup slivered almonds
  • Sesame Dressing:
  • 1/4 cup rice vinegar
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp honey
  • 1 tbsp brown sugar
  • 1 tsp grated ginger
  • 1 clove garlic, minced

Instructions

  1. In a bowl, combine chicken, soy sauce, sesame oil, cornstarch, honey, ginger, and garlic powder. Marinate for at least 15 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  3. In a large bowl, combine shredded green cabbage, purple cabbage, carrots, and green onions.
  4. In a small bowl, whisk together rice vinegar, soy sauce, sesame oil, honey, brown sugar, ginger, and garlic for the dressing.
  5. Pour dressing over the cabbage mixture and toss to coat.
  6. Top with cooked chicken, sesame seeds, and slivered almonds. Serve immediately.

Notes

For an extra crunch, toast the sesame seeds and almonds before adding them to the salad. You can also add wonton strips for even more texture.
