Red White and Blue Cheesecake Bars

These Patriotic Cheesecake Bars are a festive and delicious treat perfect for any Fourth of July celebration! With layers of creamy cheesecake and a burst of berry flavors, they’re sure to be a crowd-pleaser.

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup melted butter
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9×13 inch baking dish.
  2. In a large bowl, beat cream cheese and sugar until smooth. Mix in vanilla and eggs until just combined. Stir in sour cream.
  3. Pour cheesecake batter over the crust.
  4. Arrange blueberries and raspberries on top of the cheesecake batter in a patriotic pattern.
  5. Bake for 30-35 minutes, or until the center is just set. Let cool completely before refrigerating for at least 2 hours. Cut into bars and serve.

Notes

For best results, use full-fat cream cheese. You can substitute other berries if desired. Store leftover bars in the refrigerator.
