  • 1/2 cup almond flour, finely ground
  • 1 cup powdered sugar
  • 2 large egg whites, aged
  • 1/4 cup granulated sugar
  • 1/4 tsp cream of tartar
  • Pink gel food coloring
  • Raspberry buttercream filling (recipe below)

Instructions

  1. Preheat oven to 300°F (150°C).
  2. Sift together almond flour and powdered sugar.
  3. In a separate bowl, beat egg whites and cream of tartar until foamy. Gradually add granulated sugar and continue beating until stiff peaks form.
  4. Add pink gel food coloring to the meringue and mix until evenly colored.
  5. Gently fold the dry ingredients into the meringue until just combined. Be careful not to overmix.
  6. Transfer the batter to a piping bag fitted with a round tip.
  7. Pipe 1.5-inch circles onto a baking sheet lined with parchment paper.
  8. Tap the baking sheet firmly on the counter several times to release any air bubbles.
  9. Let the macarons rest at room temperature for 30-60 minutes, or until a skin forms.
  10. Bake for 12-15 minutes, or until the feet are well-risen and the macarons are set.
  11. Let the macarons cool completely before filling with raspberry buttercream.

Notes

For best results, age your egg whites for 24-48 hours in the refrigerator. You can also add a pinch of freeze-dried raspberry powder to the macaron shells for a more intense raspberry flavor.
