  • 2 1/2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup vegetable oil
  • 1 cup pineapple juice
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans or walnuts (optional)

Optional Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

    1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
    2. In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
    3. In a separate bowl, whisk together the eggs, vegetable oil, pineapple juice, and vanilla extract.
    4. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
    5. Stir in the chopped pecans or walnuts, if using.
    6. Pour the batter into the prepared baking pan and spread evenly.
    7. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
    8. Let the cake cool completely in the pan before frosting (if using).

Optional Cream Cheese Frosting:

    1. In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.
    2. Gradually add the powdered sugar, beating until smooth.
    3. Stir in the vanilla extract.
    4. Once the cake is completely cool, spread the cream cheese frosting evenly over the top.

Notes

For extra pineapple flavor, add drained crushed pineapple to the batter. Store unfrosted cake at room temperature for up to 3 days or in the refrigerator for up to 5 days.
