Pineapple Chicken is a vibrant and savory dish featuring tender chicken pieces cooked with sweet pineapple chunks in a tangy sauce, perfect for a quick and flavorful weeknight dinner.

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup fresh pineapple chunks
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon cornstarch mixed with 2 tablespoons water
  • 2 green onions, sliced (optional)
  • Sesame seeds for garnish (optional)

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat.
  2. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove chicken and set aside.
  3. In the same skillet, add garlic and ginger; sauté for 1 minute until fragrant.
  4. Stir in pineapple juice, soy sauce, brown sugar, and rice vinegar. Bring to a simmer.
  5. Add pineapple chunks and return chicken to the skillet.
  6. Mix cornstarch and water, then stir into the skillet to thicken the sauce. Cook for 2-3 minutes until sauce is glossy and thickened.
  7. Remove from heat and garnish with sliced green onions and sesame seeds if desired. Serve hot over steamed rice.

Notes

For extra flavor, try adding bell peppers or a dash of chili flakes for some heat.
