  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/4 cup water, or more to thin sauce
  • 2 green onions, sliced
  • 1/4 cup chopped peanuts, for garnish

Instructions

  1. Cook egg noodles according to package directions. Drain and set aside.
  2. While noodles are cooking, heat olive oil in a large skillet over medium-high heat. Add chicken and cook until cooked through, about 5-7 minutes.
  3. In a medium bowl, whisk together peanut butter, soy sauce, honey, rice vinegar, sesame oil, ginger, and red pepper flakes (if using). Add water, one tablespoon at a time, until the sauce reaches your desired consistency.
  4. Pour peanut sauce over chicken and stir to coat.
  5. Add cooked noodles to the skillet and toss to combine.
  6. Serve immediately, garnished with sliced green onions and chopped peanuts.

Notes

For a vegetarian option, substitute tofu for chicken. You can also add vegetables like broccoli, carrots, or bell peppers to the skillet along with the chicken.
