  • 3 large eggs, lightly beaten
  • 4 cups cooked and chilled day-old white rice (Jasmine or Basmati)
  • 3 tablespoons low-sodium soy sauce (adjust to taste)
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil (toasted)
  • 1/2 cup frozen peas and carrots (optional)
  • 23 green onions, thinly sliced (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Prep your station: Chop onion, mince garlic, grate ginger, beat eggs, and break up cold rice clumps.
  2. Cook the beef: Heat oil in a skillet over medium-high heat. Add ground beef and cook until browned (5–7 minutes), season with salt and pepper, then drain and set aside.
  3. Sauté the aromatics: In the same skillet, sauté chopped onion for 5–7 minutes until golden. Add garlic and ginger and cook for 1 more minute.
  4. Scramble the eggs: Push onion mixture to one side, add eggs to the other, and scramble until just cooked. Mix with onions.
  5. Fry the rice: Add beef and rice to the skillet. Stir-fry over medium-high heat for 3–5 minutes, breaking up clumps. Add frozen peas and carrots (if using) and stir-fry for another 2 minutes.
  6. Sauce and season: Drizzle in soy sauce, oyster sauce, and sesame oil. Stir to combine. Taste and adjust seasoning.
