  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound penne pasta
  • 1/2 cup grated Parmesan cheese
  • 8 ounces fresh mozzarella cheese, cut into cubes
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken pieces and cook until browned. Remove from pot and set aside.
  2. Add chopped onion to the pot and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute.
  3. Pour in crushed tomatoes, chicken broth, oregano, basil, salt, and pepper. Bring to a boil, then reduce to a simmer.
  4. Stir in penne pasta and return the chicken to the pot. Ensure the pasta is fully submerged in the sauce.
  5. Cover and simmer for 15-20 minutes, stirring occasionally, until the pasta is cooked and the sauce has thickened.
  6. Remove from heat and stir in grated Parmesan cheese.
  7. Gently fold in mozzarella cubes, allowing them to melt slightly.
  8. Garnish with fresh basil and additional Parmesan before serving.
