Ingredients

Scale
  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 2 cups cooked rice, preferably day-old
  • 1/2 cup honey BBQ sauce (store-bought or homemade)
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp vegetable oil
  • Sesame seeds and chopped green onions, for garnish

Instructions

  1. In a bowl, marinate chicken with honey BBQ sauce, soy sauce, sesame oil, garlic powder, and red pepper flakes (if using). Let it sit for at least 15 minutes.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add marinated chicken and cook until browned and cooked through, about 6-8 minutes.
  3. Add cooked rice to the skillet and stir-fry until heated through and coated with the sauce, about 3-5 minutes.
  4. Remove from heat and garnish with sesame seeds and chopped green onions.
  5. Serve immediately and enjoy!

Notes

For extra flavor, try grilling the chicken before adding it to the rice. Adjust the amount of red pepper flakes to your spice preference. Day-old rice works best for stir-fries as it’s less likely to clump together.
