  • ½ cup unsalted butter, melted

  • 1 cup powdered sugar
  • ¼ cup fresh lemon juice (from about 1-2 lemons)
  • 1 tablespoon lemon zest (from about 1-2 lemons)
  • 1 teaspoon vanilla extract
  • 2 cups heavy cream, very cold
  • For Topping:
  • 1 ½ cups fresh blueberries

Instructions

  1. Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter until well mixed. Press the mixture firmly and evenly into the bottom of a 9×13 inch baking dish (or a 9-inch pie plate for a thicker crust). Place in the refrigerator to chill while you prepare the filling.
  2. Make the Lemon Cream Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually beat in the powdered sugar until fully incorporated. Stir in the fresh lemon juice, lemon zest, and vanilla extract until combined.
  3. Whip the Cream: In a separate, very cold bowl, whip the heavy cream with an electric mixer on high speed until stiff peaks form.
  4. Combine and Assemble: Gently fold the whipped cream into the cream cheese mixture until no streaks remain. Spread the lemon cream filling evenly over the chilled graham cracker crust.
  5. Add Blueberries and Chill: Arrange the fresh blueberries over the top of the lemon cream filling. Cover the dish loosely with plastic wrap and refrigerate for at least 3 hours, or preferably overnight, until firm.
  6. Serve: Once chilled and set, slice and serve.
