  • 1 tsp salt, divided
  • ½ tsp black pepper, divided
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 small yellow onion, finely chopped
  • 45 cloves garlic, minced
  • ½ cup dry white wine or chicken broth
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • ½ cup packed fresh basil leaves, finely chopped (plus extra for garnish)
  • ½ cup grated Parmesan cheese, plus more for serving
  • Pinch red pepper flakes (optional)
  • 4 slices fresh mozzarella cheese (or 1 cup shredded low-moisture mozzarella)

Instructions

  1. Pat chicken breasts dry with paper towels. Season both sides with ½ tsp salt and ¼ tsp black pepper.
  2. Heat olive oil and butter in a large, oven-safe skillet over medium-high heat. Sear chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  3. Reduce heat to medium. Add chopped onion and cook until translucent, about 3-4 minutes. Add minced garlic and red pepper flakes (if using), cooking for another minute until fragrant.
  4. Deglaze the pan with white wine (or broth), scraping up browned bits. Simmer and reduce by half, about 2-3 minutes.
  5. Add chicken broth and heavy cream. Bring to a gentle simmer and cook 5-7 minutes, stirring occasionally, until sauce slightly thickens.
  6. Stir in chopped basil and grated Parmesan until melted and smooth. Season with remaining salt and pepper to taste.
  7. Return chicken to skillet. Spoon sauce over chicken. Top each breast with a slice of mozzarella.
  8. Cover and simmer gently over low heat for 5-8 minutes, or transfer to a 400°F oven for 5-10 minutes. Broil for 1-2 minutes at the end for a bubbly top if desired.
  9. Remove from heat, rest a few minutes, garnish with extra basil and Parmesan, and serve warm.

Notes

Use fresh basil for the brightest flavor. Low-moisture or fresh mozzarella both work well. Make sure to pound chicken to even thickness for consistent cooking.
