  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 2 medium zucchini, chopped
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and cook until softened, about 5 minutes.
  3. Add garlic and red bell pepper and cook for another 3 minutes.
  4. Add zucchini, black beans, corn, and diced tomatoes and green chilies.
  5. Stir in chili powder and cumin. Season with salt and pepper to taste.
  6. Bring to a simmer and cook until zucchini is tender, about 10-15 minutes.
  7. Serve hot with your favorite toppings.

Notes

For a spicier dish, add a pinch of cayenne pepper or use a hotter variety of diced tomatoes and green chilies. You can also add ground beef or turkey for a heartier meal.
