  • 1/2 red onion, thinly sliced or finely diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice (from 1-2 limes)
  • 1/2 teaspoon chili powder (or to taste)
  • 1/4 teaspoon salt (or to taste)
  • Pinch of cayenne pepper (optional, for extra heat)

Instructions

  1. In a large bowl, combine the diced cucumbers and red onion.
  2. Add the chopped cilantro, lime juice, chili powder, and salt.
  3. Toss gently to ensure all ingredients are well combined and coated with the dressing.
  4. Taste and adjust seasoning if necessary, adding more lime juice, chili powder, or salt to your preference.
  5. Serve immediately or chill in the refrigerator for 15-30 minutes for best flavor.

Notes

For an extra crunch and sweetness, consider adding 1/2 cup of diced jicama or finely chopped bell pepper to the salad.
