Marry Me Chicken Soup is a creamy, dreamy concoction infused with sun-dried tomatoes, spinach, and a generous helping of Parmesan cheese, all swimming around tender pieces of chicken. It’s a soup so delicious, it just might lead to a proposal!

  • 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 2 medium carrots, peeled and diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 1 teaspoon dried Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup heavy cream
  • 5 ounces fresh spinach, roughly chopped
  • 1/2 cup grated Parmesan cheese, plus more for garnish
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 2 tablespoons fresh basil, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add onion, carrots, and celery, cooking for 5-7 minutes until softened. Add garlic and cook for 1 more minute.
  2. Add the chicken and cook until browned on all sides.
  3. Pour in the chicken broth, then add sun-dried tomatoes, Italian seasoning, red pepper flakes, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 15-20 minutes until the chicken is tender.
  4. Stir in the heavy cream and Parmesan cheese. Cook for 2-3 more minutes until the cheese is melted and the soup is heated through. Do not boil after adding cream.
  5. Add the spinach and cook for 1-2 minutes until wilted.
  6. Ladle into bowls and garnish with fresh basil and extra Parmesan cheese.
  7. Serve immediately and enjoy!

Notes

Use high-quality chicken broth for the best flavor. If storing leftovers, cool completely and refrigerate in an airtight container for up to 3 days. Reheat gently over medium heat without boiling.
