These Keto Cottage Cheese Bagels are a low-carb, protein-packed alternative to traditional bagels, perfect for a satisfying breakfast or snack.

  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon xanthan gum (optional, for texture)
  • 1/4 teaspoon salt
  • Sesame seeds or everything bagel seasoning for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the cottage cheese and eggs until smooth.
  3. Add almond flour, coconut flour, baking powder, xanthan gum, and salt to the bowl. Mix until a dough forms.
  4. Divide the dough into 4 equal portions. Shape each into a ball, then create a hole in the center to form bagel shapes.
  5. Place the bagels on the prepared baking sheet. Sprinkle with sesame seeds or everything bagel seasoning if desired.
  6. Bake for 25-30 minutes until golden brown and firm to the touch.
  7. Allow to cool slightly before serving. Enjoy warm or toasted with your favorite keto-friendly toppings.
