  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons melted unsalted butter
  • 32 ounces cream cheese, softened
  • 1 1/4 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1 cup light corn syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 cups pecan halves

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake for 8-10 minutes. Let cool.
  3. Reduce oven to 325°F (160°C). Beat cream cheese until smooth, then mix in sugar.
  4. Add eggs one at a time, mixing gently. Stir in vanilla and sour cream.
  5. Pour filling over crust and bake for 50-60 minutes until edges are set but center jiggles slightly.
  6. Turn off oven and let cheesecake sit inside with the door slightly open for 1 hour. Cool completely.
  7. In a saucepan, melt butter and mix in brown sugar and corn syrup until smooth. Let cool slightly.
  8. Whisk in eggs, vanilla, and salt. Stir in pecans.
  9. Pour pecan topping over cheesecake and bake for 15-20 minutes until set.
  10. Cool at room temperature, then refrigerate for at least 4 hours before serving.

Notes

For a smooth cheesecake, avoid overmixing and allow it to cool gradually. For an extra flavor kick, add a splash of bourbon to the pecan topping.
