Honey Roasted Carrots with Thyme: A Simple Side Dish

  • 1 kg carrots, peeled and cut into sticks
  • 2 tablespoons olive oil
  • 3 tablespoons honey
  • 1 teaspoon sea salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Line a baking tray with parchment paper.
  3. In a large bowl, mix olive oil, honey, salt, pepper, and garlic powder.
  4. Add carrots and toss to coat evenly.
  5. Spread carrots in a single layer on the prepared baking tray.
  6. Roast for 25-30 minutes, flipping halfway through, until carrots are tender and caramelized.
  7. Garnish with chopped parsley before serving if desired.
