These cozy Honey Butter Cornbread Poppers are bite-sized delights, perfect for a comforting snack or side dish. Made with sweet cornbread and brushed with a luscious honey butter glaze, they’re irresistibly warm and flavorful.

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (whole or 2%)
  • 1/4 cup unsalted butter, melted (for batter)
  • 1 large egg
  • 1/4 cup unsalted butter, melted (for honey butter glaze)
  • 2 tablespoons honey

Instructions

  1. Preheat & Prepare: Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or a popper pan.
  2. Combine Dry Ingredients: In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.
  3. Combine Wet Ingredients: In a separate medium bowl, whisk together the milk, 1/4 cup melted butter (for batter), and egg until well combined.
  4. Mix Batter: Pour the wet ingredients into the dry ingredients and stir just until combined. Be careful not to overmix; a few lumps are okay.
  5. Fill Molds: Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  6. Bake: Bake for 12-15 minutes, or until the tops are golden brown and a toothpick inserted into the center of a popper comes out clean.
  7. Make Honey Butter: While the poppers are baking, melt the remaining 1/4 cup butter (for glaze) in a small microwave-safe bowl or saucepan. Stir in the honey until well combined.
  8. Glaze Poppers: Once baked, remove the poppers from the oven. Let them cool in the pan for a few minutes before carefully transferring them to a wire rack. While still warm, brush generously with the honey butter glaze.
  9. Serve: Serve warm and enjoy!

Notes

For an extra kick, add a pinch of cayenne pepper to your cornbread batter, or sprinkle the finished poppers with a little flaky sea salt.
