Refreshing Homemade Gazpacho

This chilled Spanish soup is perfect for hot summer days. It’s a refreshing blend of raw vegetables that’s both healthy and delicious.

Ingredients

  • 2 pounds ripe tomatoes, cored and roughly chopped
  • 1 cucumber, peeled, seeded, and roughly chopped
  • 1 red bell pepper, cored, seeded, and roughly chopped
  • 1/2 red onion, roughly chopped
  • 2 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped fresh parsley, for garnish

Instructions

  1. Combine tomatoes, cucumber, bell pepper, red onion, and garlic in a blender or food processor.
  2. Add red wine vinegar, olive oil, salt, and pepper.
  3. Blend until smooth.
  4. Taste and adjust seasoning as needed.
  5. Refrigerate for at least 2 hours to allow flavors to meld.
  6. Serve chilled, garnished with fresh parsley.
  7. Enjoy!

Notes

For a smoother gazpacho, strain the soup through a fine-mesh sieve after blending. You can also add a pinch of cumin or smoked paprika for extra flavor.
