  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter
  • 1 cup pecan halves

Instructions

  1. In a medium saucepan, combine heavy cream, whole milk, granulated sugar, brown sugar, and salt. Heat over medium, stirring until sugar dissolves. Do not boil. Remove from heat and stir in vanilla extract.
  2. Pour the mixture into an airtight container and refrigerate for at least 4 hours or overnight.
  3. In a skillet, melt butter over medium heat. Add pecans and toast until golden brown, about 5-7 minutes. Let cool completely.
  4. Churn the chilled ice cream base in an ice cream maker according to the manufacturer’s instructions.
  5. During the last few minutes of churning, add the toasted pecans.
  6. Transfer to an airtight container and freeze for at least 2 hours before serving.

Notes

For the best flavor, toast the pecans properly and chill the base thoroughly before churning. Store in an airtight container to prevent freezer burn.
