Ingredients

Scale
  • 4 cups bread flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 1/2 cups warm water
  • Everything bagel seasoning, for topping
  • Cinnamon and Raisins, for cinnamon raisin bagels

Instructions

  1. In a large bowl, combine bread flour, sugar, salt, and yeast.
  2. Add warm water and mix until a shaggy dough forms.
  3. Turn dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic.
  4. Place dough in a greased bowl, turning to coat. Cover and let rise in a warm place for 1 hour, or until doubled in size.
  5. Punch down dough and divide into 8 equal pieces. Shape each piece into a bagel.
  6. Bring a large pot of water to a boil. Add 1 tablespoon of sugar to the water.
  7. Drop bagels into boiling water, 2-3 at a time, and boil for 1 minute per side.
  8. Remove bagels from water and place on a baking sheet lined with parchment paper.
  9. If making everything bagels, sprinkle with everything bagel seasoning. If making cinnamon raisin bagels add cinnamon and raisins to the dough before the first rise.
  10. Bake in a preheated oven at 425°F (220°C) for 20-25 minutes, or until golden brown.

Notes

For a chewier bagel, let the dough rise in the refrigerator overnight. You can also add different toppings to customize your bagels.
