  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 cup sour cream
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1/2 cup milk
  • 1 can (20 ounces) crushed pineapple, undrained
  • 1 container (8 ounces) frozen whipped topping, thawed
  • 1/2 cup flaked coconut, toasted

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine cake mix, pudding mix, sour cream, vegetable oil, eggs, and milk. Beat with an electric mixer on medium speed for 2 minutes.
  3. Stir in crushed pineapple with its juice.
  4. Pour batter into prepared pan and bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  5. Let cake cool completely in the pan.
  6. Spread thawed whipped topping evenly over the cake.
