  • 1½ cups (120g) Rolled Oats (Old-Fashioned)
  • 1 tsp Baking Soda
  • ½ tsp Salt
  • 1½ tsp Ground Cinnamon
  • ½ tsp Ground Nutmeg
  • ¼ tsp Ground Ginger
  • ⅛ tsp Ground Cloves (or 2½ tsp Pumpkin Pie Spice)
  • ½ cup (113g) Unsalted Butter, softened (or melted Coconut Oil)
  • ½ cup (100g) Coconut Sugar (or Brown Sugar)
  • ¼ cup (85g) Maple Syrup
  • ¾ cup (170g) Pumpkin Puree (100% pure)
  • 1 Large Egg (or 1 Flax Egg for vegan)
  • 1 tsp Vanilla Extract
  • Optional: ½ cup Chocolate Chips, Chopped Nuts, or Dried Cranberries

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment or silicone mats.
  2. In a medium bowl, whisk together flour, oats, baking soda, salt, and all spices. Set aside.
  3. In a large bowl, cream butter (or coconut oil) and coconut sugar until light and fluffy, about 2-3 minutes.
  4. Mix in maple syrup, pumpkin puree, egg (or flax egg), and vanilla extract until just combined.
  5. Gradually add dry ingredients to wet, stirring until just combined. Do not overmix.
  6. Fold in optional chocolate chips, nuts, or cranberries if using.
  7. Drop rounded tablespoons of dough onto baking sheets, spacing 2 inches apart. Flatten slightly for even baking.
  8. Bake for 12–15 minutes, until edges are golden and centers are set. Cool on sheet 5 mins, then transfer to wire rack.

Notes

Use spoon-and-level method for flour. Let cookies cool completely to set texture. Store in airtight container for up to 4 days or freeze for longer storage.
