Ground Beef Zucchini Sweet Potato Skillet

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn
  • 1 packet taco seasoning
  • Shredded cheese, for topping

Instructions

  1. Brown ground beef in a skillet over medium-high heat. Drain excess grease.
  2. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  3. Stir in diced tomatoes, black beans, corn, and taco seasoning.
  4. Bring to a simmer and cook for 10 minutes, or until heated through.
  5. Top with shredded cheese.
  6. Serve immediately.

Notes

For a spicier dish, add a pinch of cayenne pepper or a diced jalapeño.
