A bold fusion of a classic grilled cheese and a hearty burrito, packed with gooey melted cheese, seasoned ground beef, and flavorful toppings for the ultimate comfort food experience.

  • 2 large flour tortillas (1012 inches)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup cooked seasoned ground beef (see recipe below)
  • 2 tablespoons butter, divided
  • 1/4 cup sour cream (optional, for serving)
  • 1/4 cup salsa (optional, for serving)
  • Optional toppings: guacamole, diced tomatoes, shredded lettuce, pickled onions, cilantro

Instructions

  1. Prepare the seasoned ground beef: Cook 1 lb ground beef with 1/2 chopped onion, 2 minced garlic cloves, 1 tbsp chili powder, 1 tsp cumin, 1/2 tsp paprika, 1/2 tsp oregano, 1/2 tsp salt, and 1/4 tsp black pepper until browned and fragrant. Drain excess grease and set aside.
  2. Lay a tortilla flat and sprinkle half of the cheddar and Monterey Jack cheeses in the center.
  3. Layer half of the cooked seasoned ground beef over the cheese.
  4. Top with remaining shredded cheeses and fold in the sides of the tortilla before rolling it up tightly.
  5. Melt 1 tbsp butter in a skillet over medium heat and place the burrito seam-side down.
  6. Cook for 3-4 minutes per side until golden brown and crispy.
  7. Repeat with remaining burrito, using the rest of the butter.
  8. Remove from the skillet, let cool for a minute, then slice in half diagonally.
  9. Serve immediately with sour cream, salsa, or other toppings of choice.
