  • 4 boneless, skinless chicken breasts
  • 4 medium potatoes, chopped
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup melted butter
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat oven to 200°C (400°F).
  2. In a bowl, mix melted butter, olive oil, minced garlic, oregano, paprika, salt, and pepper.
  3. Add chicken breasts and chopped potatoes into a baking dish.
  4. Pour the garlic butter mixture over chicken and potatoes, toss to coat evenly.
  5. Sprinkle grated parmesan cheese evenly over everything.
  6. Bake for 35-40 minutes or until chicken is cooked through and potatoes are tender.
  7. Broil for the last 2-3 minutes for a golden top.
  8. Garnish with fresh parsley before serving if desired.

Notes

For extra flavor, marinate the chicken in the garlic butter mixture for 30 minutes before baking.
