  • 1 lb flank or sirloin steak, thinly sliced against the grain
  • 1 tbsp soy sauce (or tamari)
  • 1 tsp cornstarch
  • 1 tbsp olive or avocado oil
  • 8 oz ramen or udon noodles, cooked al dente
  • 4 tbsp unsalted butter
  • 68 cloves garlic, minced
  • 1/4 cup low-sodium beef or chicken broth
  • 2 tbsp soy sauce (or tamari)
  • 1 tbsp oyster sauce (optional)
  • 1 tsp sesame oil
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 2 scallions, sliced (optional garnish)
  • 1 tbsp toasted sesame seeds (optional garnish)

Instructions

  1. Marinate steak with 1 tbsp soy sauce and 1 tsp cornstarch for 10–30 mins.
  2. Cook noodles per package directions until al dente. Drain and rinse briefly with cold water.
  3. Heat oil in a large skillet over medium-high heat. Sear steak in batches 1–2 mins per side until browned. Remove and set aside.
  4. Reduce heat to medium. Melt butter in same skillet. Sauté garlic (and red pepper flakes, if using) for 30–60 secs until fragrant.
  5. Add broth, 2 tbsp soy sauce, and oyster sauce. Simmer 1–2 mins while scraping up browned bits.
  6. Add cooked noodles to skillet. Toss to coat in sauce.
  7. Return steak to skillet along with any juices. Toss gently to combine.
  8. Stir in sesame oil. Taste and adjust seasoning as needed.
  9. Serve garnished with scallions and sesame seeds. Enjoy!
