Fluffy Pancakes

  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  2. Make a well in the center and pour in the milk, egg, melted butter, and vanilla extract if using; mix until smooth.
  3. Heat a lightly oiled griddle or frying pan over medium-high heat.
  4. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  5. Cook until bubbles form on the surface and the edges are dry, about 2-3 minutes.
  6. Flip with a spatula and cook the other side until browned and cooked through, another 2 minutes.
  7. Serve hot with your favorite toppings like syrup, fresh fruit, or whipped cream.

Notes

For extra fluffiness, separate the egg white from the yolk, beat the white until stiff peaks form, and fold it gently into the batter before cooking.
