Ingredients

Scale
  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) refried beans
  • 1 can (10 ounces) diced tomatoes and green chiles, undrained
  • 8 flour tortillas (6-inch)
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole, olives, green onions

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, brown ground beef over medium heat. Drain off any excess grease. Stir in taco seasoning and cook according to package directions.
  3. In a small bowl, combine refried beans and diced tomatoes and green chiles.
  4. Spread a thin layer of the bean mixture in the bottom of a 9×13 inch baking dish. Top with 2 tortillas, overlapping if necessary. Spread half of the beef mixture over the tortillas, then sprinkle with 1/3 of the cheese. Repeat layers: bean mixture, 2 tortillas, remaining beef mixture, 1/3 of the cheese. Top with remaining 4 tortillas and the rest of the cheese.
  5. Bake for 20-25 minutes, or until the cheese is melted and bubbly. Let stand for a few minutes before cutting and serving. Top with your favorite taco toppings.

Notes

For a spicier lasagna, add a pinch of cayenne pepper to the beef mixture or use a spicier taco seasoning. You can also substitute ground turkey or chicken for the ground beef. Feel free to customize the toppings to your liking!
