  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup cornstarch
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup vegetable oil
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 green bell pepper, cut into 1-inch pieces
  • 1 onion, cut into 1-inch pieces
  • 1 (20 oz) can pineapple chunks, drained (reserve juice)
  • Sweet and Sour Sauce: 1/2 cup reserved pineapple juice, 1/4 cup ketchup, 1/4 cup white vinegar, 1/4 cup sugar, 2 tbsp soy sauce, 1 tbsp cornstarch

Instructions

  1. In a bowl, combine chicken, cornstarch, salt, and pepper. Toss to coat.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from skillet and set aside.
  3. Add bell peppers and onion to the skillet and cook until tender-crisp, about 5 minutes.
  4. In a small bowl, whisk together pineapple juice, ketchup, white vinegar, sugar, soy sauce, and cornstarch.
  5. Pour sauce over vegetables in skillet. Bring to a simmer and cook until sauce has thickened, about 2-3 minutes. Add chicken and pineapple chunks to the skillet and toss to coat. Serve immediately over rice.

Notes

For a spicier version, add a pinch of red pepper flakes to the sauce.
