Easy Plum Crumble Bars

These plum crumble bars are the perfect late-summer treat! They’re easy to make, bursting with juicy plum flavor, and have a delicious crumble topping.

  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1 pound ripe plums, pitted and sliced
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Preheat oven to 375°F (190°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang.
  2. In a medium bowl, whisk together flour, oats, brown sugar, and salt. Cut in cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  3. Press half of the crumble mixture into the prepared baking pan.
  4. In a separate bowl, combine sliced plums, granulated sugar, lemon juice, and cinnamon. Toss to coat.
  5. Spread the plum mixture evenly over the crust.
  6. Sprinkle the remaining crumble mixture over the plums.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the plum filling is bubbly.
  8. Let cool completely before cutting into bars. Use the parchment paper overhang to lift the bars out of the pan.

Notes

For extra flavor, add a pinch of cardamom to the plum mixture. You can also substitute other fruits, such as peaches or apples.
