  • 1 lemon, halved
  • 4 sprigs fresh rosemary
  • 4 sprigs fresh thyme

Instructions

  1. Preheat oven to 450°F (232°C).
  2. Rinse chicken inside and out and pat dry with paper towels.
  3. Place lemon halves, rosemary, and thyme inside the chicken cavity.
  4. Rub chicken with olive oil and season generously with salt and pepper.
  5. Place chicken in a roasting pan and roast for 50-60 minutes, or until a meat thermometer inserted into the thickest part of the thigh registers 165°F (74°C).
