  • **For the Crumble:**
  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ cups (135g) old-fashioned rolled oats
  • ¾ cup (150g) packed light brown sugar
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup (226g) unsalted butter, melted
  • **For the Lemon Filling:**
  • 1 cup (200g) granulated sugar
  • 3 tablespoons (24g) all-purpose flour
  • 1 tablespoon lemon zest (from 2 large lemons)
  • ½ cup (120ml) fresh lemon juice (from 2-3 large lemons)
  • 2 large eggs

Instructions

  1. Preheat oven to 375°F (190°C). Line a 9×13-inch (23×33 cm) baking pan with parchment paper, leaving an overhang on the sides for easy removal.
  2. **Make the Crumble:** In a large bowl, whisk together the flour, rolled oats, brown sugar, baking powder, and salt. Pour in the melted butter and stir with a fork or spatula until the mixture is well combined and crumbly.
  3. Press about two-thirds of the crumble mixture evenly into the bottom of the prepared pan. Bake for 10-12 minutes, or until lightly golden.
  4. **Make the Lemon Filling:** While the crust bakes, in a medium bowl, whisk together the granulated sugar and 3 tablespoons of flour until no lumps remain. Gradually whisk in the lemon zest, fresh lemon juice, and eggs until the mixture is smooth and well combined.
  5. Carefully pour the lemon filling evenly over the warm, partially baked crust.
  6. Evenly sprinkle the remaining one-third of the crumble mixture over the lemon filling.
  7. Bake for another 25-30 minutes, or until the top is golden brown and the lemon filling appears set.
  8. Let the bars cool completely in the pan on a wire rack before lifting out by the parchment paper and cutting into 16-24 squares or bars.

Notes

For an extra touch, dust the cooled bars with a little powdered sugar before serving. These bars are also delicious served chilled or at room temperature, and pair wonderfully with a scoop of vanilla ice cream.
