Easy Leftover Chicken Croquettes

Chicken Croquettes Introduction

These Chicken Croquettes are crispy on the outside and creamy inside with a delicious chicken flavor. They are great as an appetizer or a snack.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1/2 cup butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Oil for frying

Instructions

  1. Melt butter in a saucepan over medium heat. Stir in flour until smooth. Gradually add milk, stirring constantly until thickened.
  2. Stir in salt, pepper, and nutmeg. Add chicken and mix well.
  3. Transfer the mixture to a bowl, cover, and refrigerate for at least 2 hours.
  4. Shape the mixture into small cylinders or balls.
  5. Dip each croquette in beaten eggs, then roll in breadcrumbs.
  6. Heat oil in a deep fryer or large saucepan to 350°F (175°C). Fry croquettes until golden brown on all sides.

Notes
